Finishing a butcher block bakers table

I am trying to seal out & put a hard finish on a Maple butcher block table that was used for years as a bakers work table. My usual wipe on poly is not sealing out the grease. After removing the top 1/4" of Maple, the grease keeps coming to the surface. Is there a better prep technique or product that would result in a hard final satin finish?

No polyurethane will adhere to a greasy surface. A finishing oil like Secondo might do the job.
