Raw Oak Finish

Whenever I'm in Europe I see raw oak which has a protective finish on it but the natural colour isn't deepened by the finish. The reds and yellows aren't accentuated either. Do you know how to achieve this finish. My friend Axel Vervoordt won't tell me his secret!
